The Wagyu used to make this amazing product is sourced from Security Foods, Australia’s elite producer of Wagyu Beef. Only Wagyu with a marble score of 9+ has been used to create this truly unique product. The Air Dried Wagyu is very similar in texture to that of traditional beef Bresaola.

Air Dried Wagyu



Air-drying beef is a centuries old tradition, which began in the Swiss Alps. The choicest part of the cow was kept and air cured to provide people living in the mountains with a valuable food source during the cold winter months. Air curing is an ideal way of preserving meat, ensuring that the beef remains a high valuable source of energy.

Today air curing beef results in a beef that is intensely flavoursome and succulent. Air Dried Beef is best served thin (0.75mm – 0.95mm) with a twist of black pepper. Serve with crusty bread and a glass of good red wine and enjoy!

Coppa is made according to a century old Italian tradition of picking the finest, most marbled, premium quality pork neck (only female pork is selected), seasoning the meat using a recipe that dates back to 1906 and then fermenting and air drying the pork. During this process the Coppa is never heated or injected.

It takes approximately 10-12 weeks to produce and the Coppa loses about 35 – 40% of its original weight.
To ensure that your piece of Coppa does not dry out and become tough, store your Coppa in the traditional way of packing, that is, in a white wine saturate fabric. This will ensure that the meat remains tender. Alternatively you can store in an air tight container at a temperature of 4 to 14 degrees Celsius.

To best enjoy your Coppa is to serve with nut bread and a glass of red wine.
